Buttered Leeks

What can you do with a glut of leeks? And, no, I don’t mean all the leeks that I’ve been growing in my non-existent vegetable patch – I mean all the leeks I’ve had delivered to my door having mistakenly ordered 6 bags of leeks with the internet shopping rather than just 6 leeks! (how many times am I going to do this before I finally learn?!) What can you do with 18 leeks?!? I thought that 6 was quite enough.

So – as you can imagine – we have been eating leeks all week: leek and bacon pasta (a combination of leeks, chopped bacon, cream cheese and peas – not a big success with my family), shepherds pie (with leeks), but possibly my favourite is just plain old Buttered Leeks – delicious!

Now – what should I do with the other 10?!

Buttered Leeks

leeks
Serves 4
Fridge to Table Time: 25 mins

Ingredients

  • 4 leeks – white parts sliced and washed
  • 2 oz butter
  • 2 sprigs fresh thyme
  • salt and pepper

Method

  1. Melt butter over a medium heat in a thick bottomed frying pan
  2. Add sliced leeks and stir gently until leeks all covered in butter
  3. Add thyme if using, cover pan, turn heat down low and leave to cook gently for 15 mins until soft
  4. Remove thyme and serve.

Supper in minutes?

Do you ever buy those ‘fast food’ cook books? I’m sure you know the ones I mean – those lovely recipe books that claim you can cook all the meals in a matter of a few minutes?. I bought one last week. It’s a lovely book – beautiful pictures of delicious nicely-presented meals, all apparently prepared in 10 mins, with the cook standing in the background looking cool, relaxed and well-groomed. And I confess that I was hooked! How could I fail to produce lovely delicious-nutritious meals in minutes with a book like this? (do I hear you laughing already?)

The reality was – of course – somewhat different.

It started with the disbelieving look my 12 year old gave me when I told him what I was trying to do. “I’ll time you then Mum”, he said as he went off up to his room leaving me surrounded by all my ingredients, pots and chopping boards waiting to get going.

And of course he was right! Most of these quick meal books seem to expect you to start with everything already chopped and just waiting to be added to whatever you are cooking (and what use is that when you get home from work to an empty house with no-one but me to do the chopping?!). And having started with ingredients ready and oven warmed they then seem to expect you to chop-fry-mix-boil-etc so furiously that you can only finish in the given time by working flat-out – not quite what I want to do after an 10 hour working day! However, all went well till the last little bit when in my rush to try and finish I managed to pour the chick peas down the sink instead of just draining them – ah well.

And of course, at this point in comes my son: “How are you doing then, Mum, it’s 29 minutes…”

However…

…it is of course possible to cook a meal in minutes – even if you’re not budding Masterchef 2011. The meals that I like best are the ones that take an easy 20 minutes or so to prepare (starting from opening the fridge door) – so either are really simple and easy to cook, or if they take longer to cook the preparation is short – perhaps something you can throw into a baking dish, put in the oven and come back to half an hour later.

One of my favourite quick recipe is this fresh Tomato Pasta Sauce which can be made really quickly – particularly if you use fresh pasta. I hope you like it…

If you’re gonna start somewhere – why not here?

How do you decide what to put into a first post?
Well – I don’t know either. But as I drove home just now with the words of Toby Mac ringing in my ears I thought maybe I should just get on with it.

So – Hello.

My name is Annie. I’m a working Mum with two children (one teenager and one going-on-teenage), one workaholic husband, 21 fish and a busy job. I don’t know about you but I find juggling all the different demands of work, family, shopping, homework, cooking etc somewhat stressful and live in dread of one of my spinning plates smashing on the floor! I enjoy cooking, but not every day, and I find that if things get busy, then the thing that tends to get squashed out is the meal preparation. And let’s be honest, I would prefer to spend time playing with my children, or talking to my husband rather than slaving over a hot stove in the kitchen – wouldn’t you?

So over the past several years its been my ambition (well – one of them…) to produce lovely delicious-nutritious meals in the minimum amount of time. And this web-site is dedicated to get-out-of-the-kitchen-fast cooking! – such as:

  • Quick Weekday Recipes can you really cook supper in less than 15 minutes? (it’s certainly fun trying!)
  • Home-made Ready Meals. that are quick to prepare, you know what’s gone into them, and you can freeze them to defrost when needed.
  • Cook Once:Eat Twice. Cook double one night and serve up with a different ‘look’ the next night.
  • Freezer Recipes.
  • Planning Ahead. Probably the one thing that saves the most time – and cuts waste, cuts cost and cuts out those last minute rush trips to the supermarket on the way home from work!

But there are some recipes that are just so delicious that they are worth spending time on, so not all of the recipes you will find here are super-quick time savers.

But please – I don’t have all the answers and am always looking for new tips – if you have any ideas or tips for keeping the family fed and healthy and yourselves sane, please share them here!
